Austrialian Boston Bay Black Mussels, with purple-black shells, hide nuggets of buttery meat with a rich, mushroomy sea flavour. They are hung from floating rafts in deep-water bays, so they are always sand-free and glossy-shelled. Mussels are very famous in French, Italian or Asian cuisine. In Europe, the famous cooking is poached with white wine while in Asia, especially South-east Asia, the popular way is to be fried with Sambal Chilli sauce.
