Live Sea Whelk

Live whelks, also commonly referred to as conch, has a sweet mild taste likened to those of clams.
Using a fork, carefully remove the whelk from its shell. Cut and discard the stomach sack and top disc of the whelks, and rinse the meaty parts thoroughly.
Steam the whelks for 10 to 15 minutes, or 20 minutes if they are large. Serve the hot whelks immediately with clarified butter for dipping, or sprinkle them with salt and malt vinegar.
